What Is Coconut Milk?
Do you know coconut milk actually isn’t “milk” at all?
Coconut milk is a liquid that is naturally found inside matured coconuts, stored within the coconut ‘meat’. When you crack open a fresh immature, green coconut, the liquid that leaks out is coconut water. On the other hand coconut milk is an emulsion of coconut cream and coconut water, which is found in a matured coconut.
So, what’s the difference between coconut water and coconut milk? As a coconut matures, more of the water inside is replaced with coconut cream. So, coconut milk comes from mature coconuts, the coconut water comes from younger coconuts.
Coconut milk is higher in medium chain saturated fatty acids with lauric acid being the most dominant one in them. Moreover, it contains vitamin C, E, B1, B3, B5, and B6 as well as iron, selenium, sodium, calcium, magnesium and phosphorus and protein.
